Winemaking:
The fruit is hand harvested, into 20kg picking bins. The fruit is gently pressed and fermented at 12ºC partly in stainless steal tanks (80%) and the remainder in oak barrels.
Intense Battonage for the first 30 days in Barrel.

Aging: 9 months in new french oak barrels.

Grape Variety:
Viognier (100%)
Tasting Notes:
Light yellow in colour, intense nose, fresh citrus and a touch of spicy oak.
The mouthfeel is rich and full with concentrated aromas.
The acid is well balanced and long in the mouth.
Unctuous buttery finish in result of the Battonage.
Soil type:
Clay(ey) limestone of medium depth.
Climate:
Mediterranean. Hot dry days and cool nights.

Storing and Serving:
Store at 8-10 ºC , is to be served at 10ºC and drunk at 12ºC.
